I do it too, but only for development, not for production. Or if I have 
exactly the same application (ie. same workflows, same Document classes, 
etc.) for all sites.

For example, imagine that you have 2 commercial sites of ERP5. Maybe you 
want one site to use different Zope products from the other (especially if 
one site has custom products with "trade secret" code). The only way is to 
use 2 instances of Zope.
